Ingredients :

12 Mini Sweet Tellin Ready to fill 

120 g pineapple chunks

1 sachet vanilla sugar

30 g sugar

1 tsp cornflour

1 tablespoon pineapple juice

5 g butter

1 egg white

60 g fine sugar

Preparation:

Blend the pineapple chunks.

Add the sugar.

Heat over a low heat.

Add the pineapple juice and cornflour to the blended pineapple.

Remove from the heat and gently add the butter.

Leave to cool, then decorate the shortbread mini-tartelettes.

For the meringue :

Whisk the egg whites until stiff.

Add the fine sugar, then blend a little more using an electric whisk.

The meringue should be quite stiff.

Poach the tartlets.

Place the tartlets in the oven for a few minutes until the meringue is golden.
