Ingredients:

Buttery micro trendy Ready to fill

4 medium lemons

150 g sugar

3 eggs

1 tablespoon cornflour

pearls of Menton lemon juice

To prepare the mixture:

Wash the lemons.

Place the zest of 2 lemons in a saucepan.

Add the lemon juice, then the sugar and cornflour.

Heat over a low heat and stir.

Beat the eggs and gently fold into the mixture.

Whisk over high heat (be careful not to stop stirring, otherwise the cream may burn).

Leave to cool and pipe into a piping bag.

Arrange the micro trends.

Decorate with Menton lemon pearls.
