Ingredients

1 ready-to-fill shortbread heart tart

100 g dark chocolate 60% cocoa

3 eggs

50 g sugar

1/2 pod Tonka beans

salt

assorted red fruits

Preparation:

Break the eggs and separate the whites from the yolks.

Whisk the yolks with the sugar.

Melt the chocolate in a bain-marie, then remove from the heat.

Add the yolks and Tonka bean.

Beat the egg whites until stiff with a pinch of salt.

Gently fold in the chocolate. Work in a circular motion from bottom to top so as not to break the whites.

Fill the shortbread tart base in a heart shape.

Decorate with the red fruit.
