Ingredients

8 Quiche Artisanale Ready to fill

8 endives

100 g butter

2 tablespoons caster sugar

salt and pepper

200 g semi-cooked foie gras

Preparation:

Peel and wash the endives, then cut them in half lengthways.

Cut off the base of the endives.

Melt 100g butter and add the endives, flat side down.

Brown the endives for 4 minutes on each side.

When they start to brown, add a little water.

Add the sugar to lightly caramelise the endives.

Cook over a high heat until all the water has evaporated.

When the endives are cooked and melting, remove from the heat and leave to cool.

Place a slice of foie gras (+/- 1 cm thick) in the base of each quiche, then cover with the endives.

Sprinkle with small cubes of foie gras.
